<ol><li>Formaggio philadelphia</li>
<li>Yogurt magro al limone</li>
<li>Biscotti secchi neutri</li>
<li>Colla di pesce</li>
<li>Panna fresca da cucina</li>
<li>Zucchero</li>
<li>Burro</li>
<li>Limoncello</li>
<li>Buccia di limone</li>
<li>Limone</li>
<li>Zucchero a velo</li>
<li>Fragole</li>
<li>Punte di menta</li>
</ol><br />
Preparzione :<br />
<br />
Per prima cosa preparare delle fettine fine di limone, metterle in una placca con carta da forno cosparsa di zucchero a velo, e ricoprirle di zucchero a velo.<br />
Preparare un' impasto cremoso con :<br />
formaggio, yogurt, zucchero, gelatina e panna montata.<br />
Passarlo al mixer per eliminare i grumi.<br />
Farlo riposare in frigo.<br />
Tritare i biscotti al batticarne, e scottarli in padella con del burro.<br />
In formine tonde di acetato, preparare una base di biscotti e mettere in frigo a riposare.<br />
Preparare la gelatina di limoncello con acqua, zucchero, limoncello e gelatina.<br />
Acqua e Zucchero due a uno, Limoncello a gusto.<br />
Preparare la buccia di limone, bollirla e tagliarla a listarelle fine.<br />
Unirle alla gelatina, e far riposare circa 5 minuti.<br />
Mettere in una tasca da pasticcere l'impasto al formaggio.<br />
Riempire le formine lasciando circa mezzo centimetro dal bordo.<br />
Pareggiare con un cucchiaio e lasciar riposare in frigo.<br />
In fine dopo circa 20 minuti aggiungere la gelatina a filo con un mestolino, e far finire di riposare in frigo.<br />
Preparare una tartare fresca di fragole.<br />
Comporre il piatto con il tortino, la fetta di limone sopra, la tartare a fianco.<br />

Preparazione :<br />
<br />
Con la pasta frolla ricoprire una tortiera.<br />
Far bollire il grano cotto, separarlo in 2 parti e una passarla al mixer.<br />
Riunire le due parti aggiungendo l'essenza millefiori.<br />
Unire le uova, e mischiare bene.<br />
Riempire la tortiera con il composto.<br />
Creare delle striscioline di pasta frolla e ricoprire a mo' di crostata.<br />
Cuocere in forno a 160 gradi per 40/45 minuti.<br />

Ricoprirlo con il sale, lasciando scoperti la coda e la testa.<br />
Cuocere in forno a 180 gradi per 20/25 minuti.<br />

Preparazione :<br />

Per i polipi :<br />
In una pentola di alluminio piena di acqua salata mettere:<br />
Sedano, carota, cipolla, un limone spremuto e i polipi interi ma puliti.<br />
Cuocere a fuoco moderato.<br />
I polipi saranno bolliti quando al centro becco se infilzati con un coltello non rimangano attaccati.<br />
Tagliarli a cubetti e saltarli in padella con un filo di olio e uno spicchio di aglio.<br />
Regolare di sale.<br />
Sfumare con vino bianco.<br />
<br />
Per le cozze e vongole :<br />
Farle spurgare in acqua salata e sciacquarle bene per tre o quattro volte.<br />
Farle aprire in una pentola con un filo di olio e uno spicchio di aglio.<br />
Regolare di sale.<br />
Una volta cotte, sgusciarle e metterle in un contenitore.<br />
<br />
Per i gamberi :<br />
Pulirli, sgusciarli e con un incisione lungo la coda, privarli dell'intestino.<br />
Tagliarli a pezzetti e saltarli con olio e aglio.<br />
Regolare di sale.<br />
<br />
Per il brodo :<br />
Preparare un semplice brodo vegetale con sedano carota e cipolla.<br />
<br />
Preparare il risotto con cozze, vongole e gamberi.<br />
In fine una volta pronto, sul piatto aggiungere il polipo. <br />
Spolverare di prezzemolo, e un filo di olio.<br />
Decorare.<br />

Aggiungere parmigiano e, mandare avanti fino a fine cottura, gli anelli, aggiungendo acqua.<br />
Regolare di sale e pepe.<br />

<li>Acqua</li>
<li>Olio extra vergine di oliva</li>
<li>Farina</li>
<li>burro</li>

<div>Preparazione :</div><div> </div>In una casseruola tagliare a pezzettoni gli odori. <br />
<div>Unire un filo di olio.</div><div>Far rosolare il tutto poi aggungere gli scarti del pesce.</div><div>Sfumare con del vino bianco.</div><div>Coprire a filo con acqua e lasciar cocere a fuoco medio per circa 30 minuti.</div><div>In fine regolare di sale, volendo aggiungere brodo di pesce in polvere, filtrare il composto ed addensarlo con roux.</div><div> </div>3 Fhttp://www.blogger.com/profile/15410218981556368414noreply@blogger.com0
